Small-batch roastery · Poznań · since 2016

We grind only when you order.

01 Beans wait whole

Until shipping day the coffee sits in the roastery as whole beans. Ground coffee loses its aroma in days.

02 Roasted Thursday morning

The drum starts at six. Batches of 12 kg, each one logged and compared with the last.

03 Ground Thursday evening

We grind for the brew method on your order and pack it the same evening.

04 On its way to you Friday

Roast date on the label, one day in between. Skip a delivery any time up to Thursday.

The roastery on Wodna

We roast 12 kg batches on a single drum, by hand, in Poznań. Every box leaves no later than one day after the roast, with the roast date on the label.

There is no warehouse of month-old coffee here. We roast what the week's orders need, and whatever is left goes out on Friday to cafes around town.

Chapter 01

Beans bought by name, not by the sack

Twice a year our importer in Trieste sends samples. We roast them on a small sample drum and cup them on Friday mornings. Thirty samples come down to two, and those two are what we buy for the whole season.

We pay above the exchange price on both contracts, which is what happens when you buy quality instead of volume. Farm names and prices are below, there is no reason to hide them.

Chapter 02

Twelve kilos, because that is still small enough to hear

The Probat UG22 drum takes 22 kg and we charge 12. A smaller charge gives the beans room, the roast runs more evenly, and first crack is loud enough to hear without guessing from the curve. We roast every Thursday from six in the morning.

Every batch profile is logged and compared with the one before it. If development time drifts by more than half a percent, that batch goes to the cafes and not into boxes.

Development 19% · Weight loss 14.2%

We have been buying Chelbesa for filter for two years. Same roast date on the bag every time, same profile in the cup. I never have to redial the brew.

Chapter 03

Burrs, not blades, and one size per method

The hopper gets exactly the weight of the bag, down to 0.1 g. Nothing stays inside for the next run, so two coffees never end up in the same bag.

Flat 83 mm burrs cut the beans into particles of one size. Blades smash them into dust and boulders at once, and that is two different extractions in one cup.

The settings we ship with every bag

Whole beans are the default, because grinding fresh at home beats anything we can do on Thursday. If you have no grinder, pick a method when you order and we will grind for it. Every setting is checked by brewing, not by a chart off the internet.

Start your first box

Four fields, then your mail app opens with the message already written. We reply the same working day.

Boxes go out on Fridays, so we suggest the next one.

Orders go to hello@meridianroasters.example, a placeholder address to swap for the roastery inbox.

Before you order

How do I skip a delivery?

Every Monday email carries a Skip this box link. It works up to Thursday 12:00, needs no explanation, and does not move the payment for later boxes.

Whole beans or ground?

Whole by default. When you order you can pick one of five brew methods and we grind for it on Thursday evening. You can change that setting at any time.

When do you charge?

Thursday morning, before the roast, for that one box. We never charge up front for a whole subscription and there is no fixed term.

What if the coffee is not for me?

Write to us within two weeks. We will swap the bag for the other coffee or refund it, and you do not have to send it back.
